Kabob, also known with famous name – Kebab, has won its popularity around the world for its beautiful flavor. Kabob is grilled meat, which is sliced into small pieces and thread on skewers along with other ingredients such as onions, bell peppers or tomatoes (optional).
Kabob has its long history beginning with the simple form of cooking since human began cooking with fire. The dish has many versions spreading among different cultures and regions. But after all, we all come to down to one conclusion that kabob is one of the most famous and delicious grilled dish ever.
Spanish cooking often focuses on stewing, roasting, frying and boiling or grilling is not as common as other cooking methods. However, when Spanish starts to grill something, it is pretty sure that the dish is good. Today, we would like to introduce one of the best Spanish grilled dish – Brochetas de Pollo – Spanish Style Chicken Kabobs.
Ingredients (prep time will be about 10 minutes)
- ½ tablespoon of Fresh Parsley Sprigs
- ¼ cup of Olive Oil
- 2 minced Garlic Clovers
- 1 ½ cup of Parsley, 1 ½ cup of Rosemary (optional) – finely chopped
- ¼ Red Wine Vinegar
- 11 bounds of Boneless Chicken Breasts (cut into cubes)
- 1 Zucchini and 1 cup of Zucchini (cut into cubes)
- 1 large Onion (cut into cubes) and 1 for marinating
- 1 Clove of Red Bell Pepper, Yellow Bell Pepper and Green Bell Pepper (cut into cubes)
Cooking (cooking time will be about 30 minutes)
Step 1 – making marinade sauce: Add 2 minced garlic cloves, chopped onion, chopped parsley and rosemary, ¼ cup of olive oil and a quarter of red wine vinegar cup with ½ tablespoon of fresh parsley sprigs into blender and blend them until all ingredients turn into a thin mixture.
Step 2 – marinate the chicken breasts: Put your chicken breasts which are chopped into cubes into a large bowl, then pour the marinade sauce onto the chicken. Give them well stirs so the paste is nicely coat each chicken cubes. After that, you cover the container with plastic wrap or lid and let them sit in the refrigerator for at least one hour.
Step 3 – prepare for grilling: Preheat the grill before cooking at least 30 minutes. The prefect heat temperature is around 4500F to 5500F. When your grill is preheated, take out marinated chicken and thread the chicken, peppers and onion on metal skewers. You can use wooden skewers instead but remember to soak them in the water for about 20 minutes before grilling
Step 4 – grilling: Place your kabobs on the direct heat or the hottest part of the grill and grill to create the sear outside of the chicken. The sear will prevent the meat from drying out and keep them juicy. When chickens are seared, turn down the heat in order to let the meat cooked through while the vegetables continue to soften.
Step 5 – Serving: When kabobs are cooked through, remove them from the grill and place on a platter. Spray some salt flake on the kabobs and serve immediately while they are still warm.
The dish can serve four to six people and can be cooked for lunch or dinner as main dish. Spanish style chicken kabobs also preferred in barbecue party, birthday party or outdoor activity. Since the spice is not so strong, both children and adults can enjoy together. Chicken kabobs is advised to serve right after they are took off the grill for full flavor.
