That is the reason why we want to introduce you today easy but delicious Quinoa Salad. The salad will give a party in your mouth from the very beginning!
Ingredients (prep will take about 15 minutes)
- 1 cup of Quinoa
- 1 cup of Canned Black Beans (drained and rinsed)
- 1 cup of Canned Corn (drained)
- ½ cup of Red Bell Pepper (chopped)
- ½ cup of Red Onion (chopped)
- 1 Jalapeno (chopped and removed seeds if you don’t want your dish too spicy)
- ¼ cup of Lime Juice
- ¼ cup of Olive Oil
- 1 teaspoon of Ground Cumin
- 1 teaspoon of Ground Ancho Chili Powder
- ¼ cup of Cilantro (chopped)
- Salt and Pepper (for seasoning)
- Lime Wedge (for garnish)
Cooking (cooking will take about 15 minutes)
Step 1 – cooking quinoa seeds: Take out a large pot and pour water heavily seasoned with salt into it. The water will depend on the portion of quinoa you will cook. Make sure the seeds are completely dipped in the salted water. Bring water to a boil. Meanwhile, rinse 1 cup of quinoa under cold water until the water is cleared. Put quinoa seeds into boiled salted water and let them soften which will take about 15 minutes. After that, turn off the stove, drain and rinse quinoa under cold water. Put cooked quinoa seeds into a bowl and let them chill.
Step 2 – prepare salad ingredients: Combine 1 cup of canned black beans, 1 cup of canned corn, ½ cup of chopped red bell pepper, ½ cup of chopped red onion and 1 chopped jalapeno in a large bowl. Add chilled cooked quinoa seeds into the bowl and mix all the ingredients together using a fork.
Step 3 – making salad dressing: Use another bowl, add ¼ cup of lime juice, ¼ cup of olive oil, 1 teaspoon of ground cumin, 1 teaspoon of ground ancho chili powder in the bowl and whisk them well. Add salt and pepper into the mixture, adjust to your taste.
Step 4 – making quinoa salad: After making the salad dressing, pour the sauce over the quinoa mixture. Give the salad a little taste for adjustment. Mix ¼ cup of cilantro and use lime wedges for garnish. Just add cilantro right before you serve the dish to prevent browning.
The recipe is able to serve up to 8 people. This salad is perfect as appetizer or you can use the salad as a side dish. Just like the dish’s name, fiesta quinoa salad will give a fiesta in your mouth!
