Ingredients (the prep will take about 5 minutes)

  • 8z can of whole, peeled tomatoes
  • ¼ cup of Pomegranate Molasses
  • 2 tablespoons of Dried Dates (pitted and chopped)
  • ¼ cup of Organic Apple Cider Vinegar
  • 2 cups of Chicken Stalk
  • 2 tablespoons of Garlic Powder
  • 1 tablespoon of Onion Powder
  • 1 teaspoon of Cayenne Pepper (depend on your preference)
  • 1 pound of Salmon Fillets
  • ¼ cup of Pomegranate Seeds
  • 1 bunch of Lettuce (chopped or torn into mouth size)
  • Olive and Vinegar for dressing (or your favorite salad dressing, depend on your preference)

Other optional ingredients:

  • ½ Avocados
  • ¼ cup of Bleu Cheese
  • Cherry Tomatoes

Cooking (Cooking will take about 40 minutes)

Step 1 – making BBQ sauce: Combine tomatoes, pomegranate molasses, 2 tablespoons of dried dates, ¼ cup of organic apple cider vinegar, 2 cups of chicken stalk, 2 tablespoons of garlic powder and 1 tablespoon of onion powder in a medium pan. Put the pan with all the ingredients on the stove with medium-high heat. Boil the mixture until they reduce by half which will take about 30 minutes. When the sauce gets thicken, give it a little taste so you can adjust seasoning. The sauce reaches their right thickness when it can coat the back of spoon without dropping down. Be careful not to burn the mixture so it will have smoky smell later – which is not good. Take the sauce off the stove and let it chill (you can preserve BBQ sauce for the next time by putting the sauce in an airtight containers for about 2 weeks)

Grilled salmon

Step 2 – grilling the salmon: Divide the BBQ sauce in half. Put half of the sauce into resealed plastic bag and set them aside. Use the remaining sauce to marinate the salmon fillet for about 15 minutes. Clean and preheat the grill when salmon is marinated.

Give the grates some oil so your salmon won’t stick to the grill and fall apart. The ideal temperature is around 4500F. Put your salmon on the hottest part or on direct heat to create beautiful sear. The sear will help the salmon moist inside and don’t dry out during grilling. Reduce the heat and cook each side of the fillet for about 3-5 minutes or until it reaches your preferred doneness. Don’t overcook your salmon since the flesh will be dried and fall apart which is not tasty at all

Lettuce and pomegranate

Step 3 – assembling the salad: Toss lettuce with olive oil and vinegar. You should mix those two in a small bowl and adjust to the right taste so your salad will be not over-seasoning. Then toss pomegranate seeds into the salad. Give them some stirs and display your salad in a finest bowl or plate. Finally, put a beautiful grilled salmon fillet on the top of the salad and you have your dish done
